Whew!


Well, clearly it's been pretty busy around here! Christmas was a wonderful visit back home (first time home in 12 months - too long!) and I'm now back and getting into the swing of things. With nothing standing between us and the arrival of Chickpea in just over 8 weeks (eek!), I'm starting to focus more on things I had been hoping to get done. One of those things is stocking the freezer for those first couple of postpartum weeks when things are crazy and I'm starving while breastfeeding at 3:30am.
To that end, I plan on making all sorts of muffins, quick breads, and granola bars that I can freeze to grab when I need them in two months.

The first one is an apple muffin, since I love all things apple cinnamon. I have used the recipe from the 20-year old Canadian Living Cookbook that my husband managed to find for me on amazon.co.uk (goes for upwards of $100 on amazon.ca!!) and I am so glad to have. My mother always baked from this book, and it is the quintessential baking basics book out there.

Anyway, these muffins turned out great, so now all I need to do is get some bran and make some bran muffins too!
